Let sit for 10–15 minutes to absorb flavor.
Heat olive oil in a deep pan over medium heat.
Add onion, garlic, sweet peppers, and thyme.
Sauté for 2–3 minutes until fragrant.
Add tomatoes and okra to the pan.
Pour in water or low-sodium broth.
Bring to a gentle simmer.
Place the seasoned fish into the pan.
Spoon some of the vegetables and broth over the fish.
Cover and let steam on low heat for 10–15 minutes until fish is cooked through and flaky.
Serve hot with the broth, vegetables, and fish together.
Squeeze fresh lime juice over the top before serving.
